Classification and structure
Tannins are mainly divided into two categories according to their structure and activity: condensed tannins and hydrolyzed tannins.
Condensed tannins: also known as proanthocyanidins, mainly found in the stems, leaves and fruits of plants such as sorghum, grapes, red bean grass and lotus roots. Its molecular weight is 1000~20000Da, and most of it is a polymer composed of flavonoids-3-ols.
Hydrolyzed tannins: mainly found in the bark and fruits of plants such as chestnuts, raspberries, gallnuts, cotinus coggygria, and witch hazel trees. It is mainly formed by the combination of polyols (such as D-glucose) and gallic acid or hexahydroxydibenzoic acid. Its molecular weight is 500~3000Da, and it is easily degraded by acids, alkalis and some esterases in the intestines.
Main effects
Antibacterial effect: Tannic acid has certain antibacterial activity and can inhibit the growth of certain bacteria and fungi.
Anti-inflammatory effect: Some studies have shown that tannic acid has anti-inflammatory effects, which may be related to its antioxidant properties.
Antioxidant effect: It has antioxidant ability, which can scavenge free radicals and reduce the damage of oxidative stress to cells.
Astringent effect: Because it can bind to proteins to form insoluble complexes, tannic acid can be used as an astringent in medicine to treat minor skin trauma, burns and ulcers.
