Scoville Heat Unit or Scoville Hotness Units

Scoville designed a set of experimental methods called "Scoville Organoleptic test" to measure capsaicin content. This method is to dissolve one unit of capsaicin in the sugar water, and then give it to several people to taste, and then gradually increase the amount of sugar water until the spicy taste cannot be tasted. Scoville Hotness Units (SHU). For example, bell peppers have no spicy taste when eaten raw, so the SHU is 0~5; the SHU of allspice is between 100 and 500, which means that one unit of allspice requires 100~500 times of sugar water to neutralize. The substance with the highest SHU value is capsaicin, which

is around 15,000,000~16,000,000. Because this experimental method is greatly influenced by human subjectivity, later generations developed a method called "high performance liquid chromatography" (HPLC) to measure. However, because the Scoville indicator has been in use for a long time, the measurement value of high performance liquid chromatography is still often converted into SHU to represent the capsaicin content.
